The holidays are fast approaching and for sure, there are already several party planning in the works. One of the most important element is the food, siyempre, and it's the best time to serve special lutong nanay recipes and festive-looking dishes like this menudo. It looks and feels like Christnas, no? =) But I have to confess, this is my first time to cook this dish coz the family is not fond of dishes mixed with liver, so I made my own version here.
Menudo has hispanic origins but theirs is more soupy. Filipino menudo is considered a stew. Along with all-time favorite adobo and sinigang, menudo is one of the staple Pinoy dishes that you can serve with or without any occasion. Classic menudo usually calls for pork and pork liver. With my menudo hack, I used boneless chicken thigh fillets instead, and...... liver spread!
CHICKEN MENUDO HACK
Preparation time: 30 mins. | Cooking time: 30 mins. | No. of servings: 5-6
1/4 cup cooking oil
2 pcs. potatoes, medium sized, cut in cubes
1 pc. carrot, medium sized, cut in cubes
6 cloves garlic, minced
1 pc. onion, minced
750 grams chicken (thigh or breast) fillet, cut into 4
250 grams tomato sauce
250 grams tomato sauce
2 pcs. KNORR PORK BROTH CUBE
85 grams liver spread
85 grams liver spread
1 cup water
1 tbsp. sugar
ground black pepper
1 cup cubed red and green bell peppers
2 tbsp. raisins (optional)
To cook:
Heat oil in casserole and fry potato and carrots until lightly toasted. Remove from oil and set aside.
In the same pot, sauté garlic and onions.
Add chicken pieces and fry. Brown on both sides. Cook for about 10 minutes.
Add Knorr Pork Broth Cubes. Stir to dissolve and add tomato sauce, liver spread, water, sugar and black pepper. Mix well.
Add fried potatoes and carrots. Cover pot and cook over medium heat for about 15 minutes or until chicken, carrots and potatoes are cooked and sauce has thickened.
Add bell peppers (and raisins, if you want) and cook for another 2 minutes.
Serve immediately with steamed rice.

Look how rich the sauce is! The flavorful blend of tomato sauce, liver spread, and Knorr Pork Broth Cubes made this beautiful ulam tasty, hearty and appetizing. Kahit chicken ang ginamit ko and not an piece of liver in it, malinamnam talaga, promise!
I've been avoiding cooking menudo for the longest time simply because I did not want to learn and I don't want to cook with liver. But with the inspiration from Knorr #LutongNanay recipes, I'm confident to say I was able to pull off a really good menudo hack. I hope you can try my recipe and let me know what you think.
